A Team Built on Experience and Craft
Behind Waxlight is a group of owner-operators who have spent years refining their craft across some of the country’s most respected kitchens and dining programs.
Certified sommelier Tony Rials leads the beverage program, bringing experience from cities like New York, Dallas, and beyond—working closely with the kitchen to develop pairings that feel intentional rather than routine.
Chef Joseph Fenush, a Buffalo native, returned after years working under nationally recognized chefs, helping shape some of the city’s most respected kitchens before opening Waxlight as a more personal, creative expression of his culinary voice.
Together with partners Jess Railey-Forster and Lauren Romanillos, the team brings a balance of technical skill, hospitality, and deep knowledge of wine and food.

Guests can begin with snacks like oysters with pickled carrot mignonette, crab rarebit on toasted brioche, or caviar served over crisp rösti. From there, the experience opens into a series of small plates, like butternut squash gnocchi with mushroom and melted Swiss, or French onion soup elevated with braised oxtail.
Larger plates—like wild striped bass with kumquat and olive mostarda or braised short rib with duchesse potato—bring depth without overwhelming the pairing experience.
